Mozzarella, Tomato & Basil Pizza

Delicious, simple and cheap! I got this recipe from Southern Living, but changed it to use the oh-so-easy Pillsbury pizza crust. Seriously, it’s so easy I hesitate to even call it a recipe.


Pillsbury thin crust pizza dough
2-3 tomatoes thinly sliced
1 8 oz. pkg. fresh mozzarella pre-sliced [I sliced the pre-sliced slices in half]
Basil – to your liking. I used a whole 8 in. stalk from my herb garden pot on the back deck


Pre-bake the pizza dough on a cookie sheet  [coat pan with plenty of olive oil! it sticks very easily] for about 5 minutes at 350 or according to package.

Then sprinkle salt, fresh ground pepper and olive oil on top.

Place mozzarella, tomatoes, and basil while talking to your husband in your best Italian accent…

Bake for 10 minutes at 350 and Enjoy!
