I know what you’re thinking… Ew, beets?! But trust me, this is a delicious, moist and chocolaty cake. It’s really more like chocolate cake with a hint of beet. The first one I made, I used a pan that was one size too small, so the top exploded up like a souffle. Oops! But this second attempt, in a springform pan, was much smoother. Delicious!
Here’s the inspiration for this month’s beet cake, spotted on Design Mom just as I was wondering what to make this month. Incase you were wondering, my cake making process looks nothing like this. :)
