These are the tiniest little balls of cookie dough I’ve ever made, but when they come out of the oven — delish! I had these Lace Cookies for the first time when we visited A’s family in Mississippi a few weeks ago, so I brought the recipe home and made them with my sister before she left for Italy! Beware though, you will pop five of these in your mouth before you know what hit you.
Delma’s Lace Cookies
Melt 1 stick of butter and pour over 1 1/2 cups of quick Quaker oats and stir together.
Sift together and add to above:
3/4 cup sugar
1 tsp. baking powder
1 tbsp flour
1 egg slightly beaten
1 tsp. vanilla
1/2 cup chopped nuts (I used walnuts)
Mix & drop 1/2 teaspoon at wide intervals on foil covered baking sheet. Bake 10 minutes at 350. Cookies will puff up and then flatten with doily-like holes. Remove foil from hot cookie sheet. Let cool on foil and peel off.
